Excellent over brown rice.Red beans & rice: It's kind of a big dealĪ meal of beans and rice might sound boring, but in New Orleans red beans & rice is something you get excited about. I have made this recipe several times, and it is really good!! Easy to make, the only thing that I add is a small bell pepper to the mix. Usually left over italian turkey orīrats from grill night. Red beans, 1/2 beer/broth, steam my rice with aįew sprigs of time and use whatever sausage I My husband from NO loves it as does my picky This is so good, have been making it for a while It was delicious, easy & made great leftovers. I made this this past weekend & it was great! I used kielbasa & brown rice instead of white (yay, fiber). As another reviewer mentioned I used brown rice instead of white. also pureed about 1/2 the mixture and then added it back. turned out a bit soupy so boiled it down a bit. Added chopped celery and peppers, red pepper flakes, used black beans instead of kidney, some canned tomatoes. Going to let it sit overnight and then puree 1/2 for a better consistency. cooked for about 1h45min to make good and thick. Added diced carrot and celery, canned tomatoes w/ juice, extra garlic, cumin and a couple of bay leaves. Oh man! Just made this again and is it delicious. I've made this many times and never gotten anything but praise. I've had this in my recipe box since I got it in Bon Appetit and recently lost it! I'm so glad I was able to find it on the net. There was nothing wrong with it.it just wasn't good. In general, I don't believe in making recipes that require a bunch of modifications.obviously this one does. Not only did this never thicken it was completely uninspired. Wish I had some corn to add, plan on trying that next time. (I added two for 1/3 the recipe) The cumin gave it some great depth, as did the extra garlic I added in at the beginning. HIGHLY recommend the bay leaves addition. I made a smaller version, added two bay leaves and let it simmer for a good 20 minutes. Pretty good! I'm a vegetarian so I layered in baby carrots and red pepper for some extra meatiness. I added one andouille and two polska kielbasa sausages, two ham hocks, a bottle of Little Kings beer, Better than Bouillon chicken broth, a can of Rotel diced tomatoes and peppers, extra onion, 6 cloves of garlic, 4 bay leaves, carrots, red beans, rice, a teaspoon of Tony Chachere's seasoning, and a tablespoon of cumin. Endless possibilities! I made it twice in one month in my crock pot. One night I nuked a bowl with fresh pineapple. I added everything everyone suggested and it was fantastic. If you want a quick and easy RB&R(sorta) recipe, the one by Bruce Aidels on his Andouille sausage package is better. You can't go THAT far wrong with smoked sausage and beans, but you can do better than this. The flavor is mostly from two unspecified ingredients the sausages (odd choices) and the creole seasoning, which could contain anything, but is usually mostly salt and pepper. RB&R is essentially a ham dish this contains no ham. Thanks for making my life easier.Īdded a can of tomato sauce, one can red band, one can black beans, used smoked turkey sausage, used creole and Cajun seasoning, and a dash of hot sauce. We can start this after work and feel like we're back home by dinner. I've spent plenty of time in Louisiana as my folks are from New Orleans, and nobody I've served this to is mad at it. I've been making this recipe for years now, as-is, and it's delicious. This can make or break the quality of the recipe. Have made this many times and I think the difference has been what cajun blend I happen to have around.
